Vegan kings brioche

To make the brioche dough, you will need the following ingredients:
- 25 cl soy milk or other plant-based milk
- 20 g fresh baker’s yeast
- 380 g strong flour
- 60 g caster sugar
- 5 g fine salt
- A few lemon and orange zests
- 70 ml rapeseed oil, peanut oil or grape seed oil
- 40 ml orange blossom flavouring
To make the glaze and topping, you will need:
- 10 ml agave syrup
- 20 ml plant-based cream
- 2 tablespoons orange or apricot jam
Preparation:
Prepare the dough the day before.
1- Crumble the fresh baker’s yeast into a bowl and pour the warm milk over it. Let rest for 15 minutes.
2- Mix the flour, sugar and salt in a large mixing bowl
3- Add the dissolved yeast, 25 cl warm milk and the orange blossom water. Work the mixture with a spatula to form a smooth dough.
4- Place the ball of dough on a floured work surface and knead it for a few minutes, folding it over itself several times. Work the dough until it no longer sticks to the work surface.
5- Then add the vegetable oil and knead the dough again, folding it over itself several times. It should become smooth and elastic and should come away easily from the work surface.
6- Place the dough in a lightly oiled and floured bowl after shaping it into a nice ball. Cover with cling film and refrigerate overnight. Let it double in size.
The next morning:
1- Knead the dough for a few minutes to knock out the air.
2- Cut the candied fruit into small cubes and distribute them evenly through the dough.
3- Make a hole in the centre of the ball and shape it into a ring with your hands.
4- Insert the fèves and bake in a preheated then switched-off oven. The goal is to let the dough rise a little more.
5- Once the dough has risen, take it out of the oven and preheat it again for 10 minutes at 200°C.
6- Brush the dough with milk. Bake the brioche for 25-30 minutes at 200°C.
7- Once out of the oven, brush with the agave syrup and jam. Then arrange the pieces of candied fruit and sugar crystals on top.
8- Let cool before serving.
